Turkey, cheddar, & chive scones

I haven't been able to find the time to type this stuff up lately! But whats been happening is that I still end up typing up recipes for people through private messages anyways, so I'm sure I'm not saving myself any time in the long run. One of the recipes I've been wanting to share for a while are these turkey, cheddar, & chive scones! They are one of my favorites lately. Ill admit... I've made them before, and we had them for breakfast and lunch... and I may have had them for dinner. Obviously I couldn't let the kids have them for dinner, there were only 2 left. 

When I'm picking new recipes online, I usually check the ones that are the highest rated first. I do also check the list of ingredients to see how they compare to several of the other recipes, and I will often pick and choose from several recipes to bring together my own version. Ive tried several scone recipes but there was a “Land O Lakes” recipe that was my favorite. So with this recipe, ive changed several things but that was the base I started with. If you have another scone recipe you prefer, you could just try adding in the extras, and leaving the base recipe the same. 

The above picture is actually of a strawberry, banana, blueberry scone I made a while back but I forgot to get a picture of the dough for these specific scones! Ill have to share the recipe for those another time. Now one problem with the original recipe was that it said it was supposed to be stirred until it came together as a dough... and it doesn't really do that. I mean maybe if you stirred for an hour? But I usually just give it a stir and once I'm not seeing any more liquid really, but its still really crumbly and dry, I start to press it down into the bowl. I try to start pressing it all together, almost like kneading it. Once it starts to hold together as a dough, I remove it from the bowl and knead it minimally.  

Ive learned that many doughs like a rest time before baking and its usually best for that to happen in the fridge or freezer. Im pretty sure that little secret was the main factor in my chocolate chip cookies I was having a hard time perfecting. 

 

 

Turkey, cheddar, & chive scones

 

3 Cups - Flour

3 Tbsp - Sugar

1 Tbsp - Baking Powder

1/4 tsp - Salt

3/4 Cup - Butter

1 Cup - Shredded Cheddar

4 oz - Chopped Turkey (deli meat or other)

1/2 tsp - Garlic powder

1 - 2 Tbsp - Fresh chopped Chives

1 1/4 Cups - Heavy Whipping Cream

 

  1. Heat oven to 350°F
  2. Combine flour, sugar, baking powder, garlic powder, and salt in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Add in turkey, cheese, & chives.
  3. Stir in whipping cream and mix until dough holds together or alternatively press the dough together until it holds. Turn dough onto lightly floured surface; knead 5 to 10 times or until dough is smooth. Divide dough into your scones. Make sure your scones are not too tall and that you do not over knead. 
  4. Chill and rest scones for at least 20 min in the refrigerator or freezer. 
  5. Place scones, at least 1 inch apart, onto ungreased baking sheet. Bake until golden brown around edges. If it is browning too quickly and they are not cooked through turn down the heat!

*Optional: Melt 1/4 cup butter. Add 1/2 tsp garlic powder and 2 tbsp grated parmesan to the butter and brush the finished scones with it.
