Our weekly breakfast

Matthew, my husband, does not love pancakes. He also does not care for french toast, two of my favorite breakfasts... we've had almost twelve years of breakfast disagreements. He is a meat and potatoes kind of guy and although this was not my original favorite breakfast, I've gotten to where I look forward to it every weekend. 

Its just a basic breakfast but we LOVE it. Sometimes we even make a version of it for dinner! (Potato, onion, garlic, turkey sausage, and steamed green beans)  I seriously love these turkey sausages too.  They can be added to so many different types of meals, they're quick, they don't cost much, and they feel healthier than a lot of other meat options. Anyway, I don't think this really even needs a "Recipe," its just whatever you want to throw in, but I will share it anyways incase someone is curious. In the summer we add extras from the garden: bell peppers, a jalapeño, and tomatoes. 

 

Tater Scramble

 

Extra Virgin Olive Oil (or your oil of choice)

5 medium red potatoes - chopped

1 smaller onion

2 cloves of garlic - minced (or garlic powder, whatever you have)

salt and pepper to taste (Matthew likes an added seasoning like Lawrys seasoning salt, Montreal steak seasoning, etc,)

1 package polish style turkey sausage - sliced

6 eggs

1-2 cups shredded cheese (depending on your own dietary convictions ;)

 

  1. Coat the bottom of your large skillet with olive oil and add your potatoes, onions, and garlic (salt & pepper) over medium heat. Cover with a lid and let cook, gently flipping potatoes occasionally, until they are fork tender. 
  2. While the potatoes are cooking you can lightly brown the sausage separately or add them in when the potatoes are almost done. You can do the same thing with the eggs. If you add them directly to the potatoes, the dish won't be quite as pretty as if you scrambled and cooked the eggs separately. As for me... Id rather not have another dish to wash, so into the main pan they go!
  3. Add your preferred amount of cheese once the eggs are cooked and the meat and eggs have been added to the pan. Easy!
  4. (OPTIONS)  If you want to add peppers, a jalapeño, and tomatoes like we do in the summer: Add the peppers and jalapeño in the middle of the potatoes cooking and we prefer the tomatoes fresh, added when we do the cheese.
